Join Enrico Valleferro, Ambassador and Export Manager for Italian Sparkling wine producer Adami in Canada’s first Prosecco theme dinner. The setting for this sparkling event will be at the highly celebrated and destination restaurant, Blue Water Café + Raw on October 9, 2012 at 6:30PM. During the course of the evening, he will share with us, the story of Adami Prosecco wines and tales from the Valdobiaddene region.
Recognized as the “benchmark producer” in the region by wine journalists and their peer producers, the Adami family has been producing award winning wines since 1933. In recent years, their prestigious wines have been chosen and served at the 2009 G8 summit in D’Aquila – Italy, featured in the book 1001 Wines you must taste before you die and voted in Wine & Spirits Top 100 Wineries of 2009.
At the helm of Blue Water Café + Raw Bar kitchen, is Executive Chef Frank Pabst, who has been recipient of numerous awards including two times “Chef of the Year” award.* As an accomplished chef, he is widely recognized for his creative impetus and leadership in responsible seafood practices.* Today, Pabst leads Blue Water Cafe’s brigade of expert chefs in what has been called “one of North America’s finest seafood restaurants.” Fine tuning the food and wine pairings for the evening will be Andrea Vescovi, Blue Water Café‘s Wine Director who was a awarded 2009 Sommelier of the year.*
To whet one’s appetite, we begin this bubblicious evening with Italy’s favorite aperitif, Aperol Spritz made with Prosecco alongside with two amuse bouches – Qualicum Bay Scallop Ceviche with Grapefruit and Spiedini di Gamberoni with Madras Curry. We will then settle into this sparkling evening with a first course of Sockey Salmon Carpaccio with wild arugula, fennel and orange, honey mustard dressing, paired with Bosco di Gica. Next, Chef Frank Pabst will delight our senses with Lobster Raviolo with parsnip lobster foam, crispy calamari, Moroccan spices matched with Dei Casel. The sublime Maple glazed Sablefish with smoked celeriac puree, green beans; yuzu butter sauce is a match made in heaven with Vigneto Giardino 2011. Our sweet ending of Vanilla Lemon Panna Cotta, accompanied with white peach jelly and almond cranberry biscotti will be celebrated with Cartizze Dry. To top off the evening, a digestivo of Prosecco grappa will be offered to guests.
